One of the benefits that a sponsored child gets is emergency food assistance. We are able to help supplement the cost of food for those families who can’t afford it in a time of unemployment or crisis. A few of the staple foods of Zambia are:
- Nshima
- Kapenta
Nshima is the staple food of Zambia. It is eaten with every meal and used similar to how we would use bread in America. Nshima is made from corn flour and when mixed with boiling water it makes a thick paste which is an artform to get just the right texture. To eat nshima, you ball it in your hand and eat it plain or dip it into a “relish” which
is usually a type of meat or vegetable dish that is more flavorful.
Kapenta is pretty simply just a dried sardine. While not a very popular dish in America, these little fish are cooked with seasoning in Zambia and are a great item to go with nshima. Usually it is fried in a pan and yes…you eat the whole thing.
